  • How do I contact the Processor?
    We work with four different processors. We will tell you who we sent your beef to and provide you the number that you should call.
  • When should I contact the processor?
    Once we notify you that your beef has been sent you will want to contact the processor within a week to touch base.
  • When I first call how should I identify myself?
    We will have the beef portion you purchased already attached to your name so that when you call if you provide your name, they will be able to pull everything right up. If, for some reason, they do not show this information on file, you can give them the portion you processed and our name. For example, you can say, "My name is Jane Smith, and I purchased a quarter beef from J & A Koebel."
  • The processor wants "cutting orders", what does this mean?"
    This is referring to how you want your meat cut and packaged. Your processor will run through their standard list of cuts and give you an opportunity to provide feedback on your specific needs. If you are unsure of the specifics, feel free to ask them what they typically do for people. Additional helpful details continue in the questions below.
  • The processor is asking me how I want my ground beef packaged?
    You can package it however best meets your family’s needs. We typically have ours put in individual 1-pound packages. We also know several families that prefer individual 2-pound packages. We always ask the processor to ground our beef twice, but the option is yours. You can also ask them to put it into pre-pattied burgers. We have had both 1/2- and 1/3-pound burgers and we prefer the 1/3 pound.
  • The processor is asking me how many steaks I want per package?
    For a family of four, we recommend two steaks per package. This gives us flexibility to get out two packages or split the one package between us.
  • What is a Rib Roast?
    If you leave it not cut, you will get your prime rib. It you cut it; this is where your ribeye steaks will come from.
  • What should I do with my cube steak?
    Many people have this ground into hamburger; however, our family enjoys eating it and you may too!
  • What are some things I may not realize I can have my beef made into?
    Depending on the processor, you can make your beef into just about anything. We have ours put into beef sticks (which you can have cheese added or many other flavors) and beef logs (yum! with crackers and cheese)
  • I have never heard of some of these cuts of meat.  What do I do with them?
    As we have mentioned, anything you don't think you want you can always have ground into hamburger. The Beef Checkoff program has also put together some great beef recipes at: https://www.beef.org
  • How will I know when my beef is ready to be picked up?
    The processor will give you a call and let you know that your beef is ready to eat!

The first time our adult kids called to make their arrangements with the processor, this was what we heard.  In many instances, making the arrangements with the processor is the scariest part of the beef buying process, because let's face it - this isn't what you all do every day!
